Roasted Sweet Potato and Cauliflower Dhal Recipe

Ingredients:

  • 1 large sweet potato, peeled and cubed
  • 1 small head of cauliflower, cut into florets
  • 1 tablespoon melted ghee or coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 1 cup vegetable broth
  • Salt and pepper, to taste
  • Fresh coriander, chopped, for garnish
  • Cooked rice, for serving

Instructions:

  1. Preheat the oven to 190°C. Toss the sweet potato and cauliflower with ghee and place on a baking sheet. Roast for 20-25 minutes, until tender and slightly browned.
  2. In a large pot, heat a bit of oil over medium heat. Add the onion and garlic and sauté until fragrant and softened, about 5 minutes.
  3. Add the ginger, curry powder, cumin, turmeric, and cinnamon. Cook, stirring constantly, for about 1 minute.
  4. Add the chickpeas, diced tomatoes, coconut milk, and vegetable broth. Simmer for 10-15 minutes, until the sauce has thickened slightly.
  5. Add the roasted sweet potato and cauliflower to the pot and stir to combine. Season with salt and pepper to taste.
  6. Serve over cooked rice and garnish with fresh coriader
